Overnight Oats

Great for meal prep!

Ingredients:

4 cups old fashioned rolled oats

6 cups milk of your choice ( I like to use a mixture of coconut and almond)

2 Tbs maple syrup

1 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp ground cardamom

1/2 tsp sea salt

2 cups fruit of your choice- I like to used chopped apples in the fall, but you could use some late summer peaches or nectarines too! Or mixed berries

If you like, you can mix in 1/2 cup raisins or golden raisins and 1/2 cup cacao nibs

Mix everything together in a bowl. It’s as simple as that! Make sure you have enough milk to well cover the rest of the ingredients. The oats are good to soak up a lot of milk, so when in doubt, you can add a bit more milk.

Cover the bowl with a tea towel and place in the fridge overnight.

In the morning, stir well and serve up!


Makes 6-8 servings.
