Super Easy Summer Salad

with homemade dressing

I love making this salad because it's easy, colorful, and very healthy!

Blueberries, being a superfood, are high in antioxidants, fiber and great for your brain. Strawberries are actually known to reduce cholesterol and protect against cancer. We know that nuts have many heart health benefits. But did you know that they can make you look good too? Nuts, such as pecans and pistachios, have anti-aging properties, weight loss benefits, and can help keep your skin glowing.

Another bonus about this salad is the dressing. It is a simple 3 ingredients! And a small amount goes a long way.

The Salad

5-7 oz of Arugala

1/4 cup of pistachios

1/2 cup pecans

3/4 cup blueberries

3/4 cup strawberries

2-4 tbsp of goat cheese

Dressing

1 tbsp olive oil

1 tbsp balsamic

1 tbsp honey


Steps

  • Place arugula in a large salad bowl

  • Add in all the nuts and berries first, leave the goat cheese for last. You can always put more or less of these toppings in depending on what you like.

  • Use your hands or tongs to mix the goat cheese in thoroughly, smothering the lettuce. This helps add more flavor to every bite.

Dressing

  • Mix the dressing together well with a whisk. I usually put all three ingredients in a small sealed container and then shake it very hard. Once mixed together, slowly toss it into your salad. You may not need all of it. I would go by feel depending on how much lettuce you have in the bowl.
